A. ESSENTIAL FUNCTIONS
1. Completes assigned cleaning duties following proper sanitation techniques. Cleans and sanitizes work tables, equipment, dish machine, sinks, floors, coolers and other dietary equipment. Empties garbage, cleans garbage cans, and takes dirty laundry as assigned. 
2. Operates the dish machine to insure thorough cleaning of dishware and utensils. Puts away clean dishes as assigned. Records dish machine temperatures each meal.  
3. Follows proper gloving procedures while in the kitchen and while handling foods, mixing salads, etc.  
4. Makes sure foods are thawed in the coolers and kept at proper temperature.   
5. Dates, labels and covers all leftovers and place in cooler or freezer.
6. Assist cooks in preparing simpler foods for cooking or service, such as vegetables, fruits, sandwiches, & meats.  
7. Cleans vending machine and refills stock items in vending room as assigned.
8. Responsible for following the diet sheets and menus when portioning foods and serving on the tray line.  Use proper equipment when dishing up foods.
9. Set up supplements and extra items for the residents and patients on their trays each meal.  
10. Prepare between-meal snacks.
11. Uses proper equipment when cleaning, dicing, cutting fruits and vegetables as needed.
12. Sets up and fills the requisition order for supplies from the nursing units.  
13. Heats special items in a microwave oven.  
14. Assists the cook in accurately setting up the cold serving line with trays and beverages and to ensure all cold food temperatures are within guidelines utilizing a thermometer. Makes sure all mealtime deadlines are met.
15. Offers menu ideas and suggestions for monthly menus.
16. Train new staff. 
17. Stocks ingredients and monitors inventory levels.

Congregate Meal Program duties (when assigned)
1. Accurately counts out the food items for the hot and cold portions of the congregate meals to be  
delivered.
2. Assists the Congregate Meal Cooks in assembling meals for delivery in a timely manner.
3. Follows proper gloving procedures while in the kitchen and while handling foods & slicing meats, etc.
4. Delivers the meals to dining sites from time to time within time constraints.  
5. Assemble the hot and cold portions of the congregate meal and utilize a heat seal machine to seal and date the meals before packaging the meals into bins for delivery.
6. Responsible to check daily totals sheet from the dining sites for day-to-day meal totals changes.

Additional Tasks and Responsibilities
While the following tasks are necessary for the work of the unit, they are not an essential part of the purpose of this position and may also be performed by other unit members.

1. Must report open or infected sores/cuts or infectious disease to Food Service Supervisor before shifts starts.
2. Identifies residents and the type of diet they require. Offers food substitutes to residents who require them within program limits. 
3. Cleans vending machine and refills stock items in vending room, as assigned.   
4. Sets up food orders, as assigned.  
5. Offers menu ideas and suggestions for menus that start in fall and spring.
6. Responsible to know and practice the safety policies of the county. Perform all job tasks in a safe and prescribed manner.

Job Qualifications:
EXPERIENCE, TRAINING, QUALIFICATIONS
High School diploma or GED education preferred.  Preferences will be given to those with food service experience.  Knowledge of proper cleaning methods, safety precautions and the use of chemicals and proper sanitation.  Able to clean and operate  food preparation equipment correctly.  Must acquire knowledge of special diets served and serving instructions.  Ability to work with minimal supervision.  Ability to work under pressure and with time constraints.  Accuracy is essential in all aspects of job responsibilities.  Ability to work cooperatively with others, must be mentally alert, accurate in measurements and have sufficient dexterity to handle food and equipment efficiently and safely.
